Birth 1819 (approx.) St Georges Gloucester
Mary's birth date has been estimated from census returns. As her birth date was before compulsory registration, we have to rely on parish records for confirmation and these have not yet been searched.
Death between 1854 and 1856 (age 34-37)
The 1861 census shows Isaac as a widower, so Mary must have died between the birth of Alice (1854) and the 1861 census. Assuming she died in the Bristol area, there are two death registrations which seem to match.

(i) Is of a Mary Ann Cottle in Bristol in September quarter 1854. This date also ties in with the birth date of Alice (in June quarter 1854).The actual dates for the birth of Alice and the death of Mary, are not yet known, but they are registered in two different quarters, so the gap between them could be a few days or a few months. Until the actual dates are confirmed or I obtain a copy of Mary's death certificate, it is probably safe to assume that if this is the correct death. Did Mary die arising from complications following the birth of Alice?

(ii) Is of a Mary Cottle in Clifton in December 1856. This date ties in with the christening of a William Henry Cottle on the 25th May 1856 in St George, Bristol (birth reg June quarter 1856 in Clifton). William has been identified in a Family Search tree as being a child of Isaac and Mary, but I have not yet been able to confirm this for myself and so have not yet added William to this tree. The gap between William's birth and Mary's death is at least 6 months, so perhaps the reason for death would not be associated with childbirth.

The other pointer is that the 1854 death is of a "Mary Ann", wheras the 1856 death is of a "Mary" which is the only name mentioned in the marriage registration. Further investigation is needed.

An Issac Cottle married in June quarter 1840 in Bristol to a Mary Wooton or Mary Phipps.
A Family Search online tree shows Isacc married to Mary Phipps but I have yet to confirm this from other sources. In the meantime I have left her name as PHIPPS? until matters are confirmed one way or another.

Census 1851 (age 31-32)
Mary appears in the 1851 census as the wife of Isaac, and mother of Sarah, Samuel and joseph, age 32 born St Georges, Gloucestershire. Her occupation is shown as "shoemaker". The Cottle family are at the top of the copy census return below.

Other Details

As mentioned above, there is still a question in my mind as to Mary's maiden name. If anyone can assist I would be most grateful.

 

Regarding district of St George, it is a district of Bristol, England and was originally outside the city boundary. It became a civil parish (Bristol St George) in 1866, and briefly an urban district from 1894 to 1898. The parish and urban district were absorbed into Bristol in 1898.
St George was a mining area from the early 19th century (coal and fireclay) until 1904 when the last fireclay mines were abandoned.
